Carol Carrot™
The carrot is thousands of years old, originally from central Asian and Middle Eastern countries including Afghanistan.  The ancient Greeks and Romans ate them.  Carrots were cultivated in the 1700’s in Europe and spread later to the U.S.  They are a relative of parsley, cumin, dill, fennel, celery, and Queen Anne’s lace flower.  This is the major vitamin A source in the U.S. diet.  It has the second highest level of sugar among vegetables and contains beta-carotene.
